Frito Corn Salad with Chips

Frito Corn Salad….don’t knock it until you’ve tried it!

I’m sure a lot of people would not consider anything with Fritos on it a salad.  And yes, I realize it doesn’t contain any lettuce, spinach, or kale.

BUT it does include vegetables…..one is even green!  So for that reason, I’m going to call it a salad.

Anyway, who says all salads have to be healthy??

First Time for Frito Corn Salad

I first tasted Frito Corn Salad at a family reunion hosted by my Aunt Rita.  She was the master organizer of these family events, and loved having everyone get together.

These family reunions took place at Aunt Rita and Uncle Jim’s farm, in the summer.  They would often set up a slip-n-slide that led to their pond at the bottom of the hill, which was a big hit with the kids.

On top of getting to see all of my aunts, uncles, and cousins, there was always a surplus of yummy food!  They had a shop outside, where they would set up picnic tables and chairs, to seek shelter from the sun.  This was also where the long tables of food were lined up.  Here you would find everything from burgers and hotdogs, to every cookie and dessert imaginable.

And of course I had to taste everything…even if I wasn’t sure what I was digging into.

So when I first tried Frito Corn Salad, I wasn’t sure if I was eating a salad or chip dip.

But one taste and I was addicted.

How to Make Frito Corn Salad

After asking around, I found out that my Aunt Catherine had made this mystery Frito concoction.  And it really is such a simple recipe!

I typically use canned corn, just because I’m kind of lazy!  But, if you are opposed to canned items, you absolutely can swap out for fresh or frozen corn that has been thawed.  However, if you do use canned corn, make sure to drain it.

Then transfer drained corn to a mixing bowl.

Next, chop peppers and onion.

Then add the peppers and onion to the bowl of corn, and mix to combine.

After that, add the mayonnaise and mix with the vegetables.

The last thing to add is the shredded cheese.

Transfer to an 8″ x 8″ pan, and refrigerate until serving.

Immediately before serving, cover with crushed Fritos.  Pretty easy, right?

Salad or Dip?

Because the Fritos are on top, I’m calling it a salad.  But if you wanted to, you could definitely set the chips to the side, and then I guess it could be called a dip?

And in that case, the Frito scoops might be a better option.

Whether you bring this to a family reunion, church potluck, or just a casual backyard cookout, it is sure to become a favorite!
