Parmesan Crusted Chicken

Plain chicken breast can get boring pretty quickly.  But this parmesan crusted chicken is packed with flavor!

Besides the fact that it is super yummy, I feel like this is a pretty healthy dinner.  Yes, I get that it is covered in a crispy coating of cheese and bread crumbs.  BUT it starts out with chicken breast which we all know is a healthy base!

In addition, it is baked, not fried.  Which honestly, I prefer.  Mainly because I can put it in the oven and forget about it, rather than monitoring while on the stove.

Above all, it is homemade!  There are only 5 ingredients in this parmesan crusted chicken, which makes it fairly quick to put together.

How to Make Baked Parmesan Crusted Chicken

Start by cutting chicken breast into nugget sized pieces.

Next, combine sour cream and egg.

In a separate bowl, combine bread crumbs and parmesan cheese.

Once you have your chicken and both wet and dry mixtures ready to go, it is almost time to start dipping.

Before dipping, make sure you have a baking dish for the chicken.  Approximately 13″ x 9″ should work great, and I use cooking spray for easy clean-up later.

Start by dipping one piece of chicken into the wet mixture, and then give it a little shake before dipping it in the dry mixture.  You can either use a fork, or clean hands.  If you use your hands, it is best to limit one hand to each bowl.

So for me, I would use my left hand to dip the chicken in the wet ingredients, before dropping it into the dry mixture.  Then I would use my right hand to make sure the chicken is covered in the dry mixture on all sides before placing it into the baking dish.

This sounds weird, but otherwise you end up with the dry mixture sticking to the wet mixture on both of your hands.  Trust me, it gets messy!

Now just pop into the oven on 325 degrees for 45 minutes.  Super easy!!

This is definitely a favorite in our family.  While my kids appreciate that it tastes/looks like a fancier version of a chicken nugget, I feel better about the fact that it is homemade, rather than coming from a fast-food restaurant!

While we rarely have leftovers, these can be reheated and taste just as good the next day.
