Easy Slow Cooker Brisket

I am not someone who gets excited about meat.  My husband, Troy…. completely different story.  And this week, he was craving brisket, which led to me trying this Easy Slow Cooker Brisket.

I absolutely love using a slow cooker.  In fact, I prefer it 9 times out of 10!  Mainly for the mere fact that I can pop whatever’s for dinner in there, and forget about it until it’s time to eat.

This may sound weird, but I feel a sense of accomplishment when I am done cooking dinner before lunchtime.  It takes minimal effort to get most of my slow cooker meals prepped and ready to go.  So if I can use a slow cooker, that’s usually what I’ll choose to do.

Besides, there is nothing better than the savory smells of dinner wafting throughout the house.  Especially on a cold day.

And considering it has been extremely cold lately, the smoker didn’t seem like the best option when Troy got his brisket craving.  Not to say he’s never used the smoker in the winter.  But when it’s really cold, the cooking time seems to take much longer than normal.

Thus, the perfect reason to make slow cooker brisket instead!

How to Cook Brisket in a Slow Cooker

Have you ever tried cooking brisket in a slow cooker before?  This was a first for me!

Troy has cooked brisket several times on the smoker.  He is the Smoker King in our house.  I guess that’s what happens when you love meat the way he does!

But when it comes to the slow cooker, that’s usually my territory.  With brisket, a slow cooking time is key…so it seemed logical that it could be done.

I started by searing the seasoned brisket in oil for about 8 minutes per side.

I had done this when I was making pot roast a week or so ago, and the results proved this extra step was worth it!

After that, I simply placed the brisket in the slow cooker on the LOW setting.  I added a chopped onion, as well as beef broth, ketchup, and seasoning.

Next, I took the brisket out of the slow cooker, and poured the broth/onion mixture into a saucepan.  I cooked this on the stove on MEDIUM for about 5 minutes.

Meanwhile, I mixed cornstarch and water in a separate bowl.

Last, I added the cornstarch/water mixture to the broth/onion mixture, and then cooked an additional 2 minutes to thicken to a sauce.

The final step was to pour the thickened beef onion sauce over the brisket.

Easy = Delicious

And that’s it!  Super easy!  The meat was so tender it was literally falling apart as we cut it.

Also, there was plenty of sauce that you could definitely add other vegetables to your slow cooker if you would like.  A few carrots or potatoes would be perfect!

Troy enjoyed his brisket sliced.

While, my oldest daughter, Ava preferred hers shredded.  We didn’t add vegetables this time, so had a side of broccoli to go with it instead.

Ava actually told me she preferred how it tasted cooked in the slow cooker, over the smoker.  May have had something to do with the cook. 😉
